My current research project is studying hydroxytyrosol production in Escherichia coli. Hydroxytyrosol is a powerful antioxidant, mostly produced from enriched olive extracts. We aim to increase the yield of hydroxytyrosol by genetic modification of the cell, based on proteomics and metabolomics data.
